Cool Cucumber Salad
The weather here has been nothing but miserable the past few days; hot, humid and hazy. (UPDATE: there is a TORNADO watch until 6 p.m. tonight! Wow…tornadoes in Vermont, that’s exciting!) I have been trying to prepare meals that don’t require the stove top or oven. I am head over hills for this recipe! This one is a keeper! It’s low in calories, yet so refreshing. This recipe is found in the Joy of Cooking cookbook.
Cool Cucumber Salad:
Serves 4
Combine in small bowl:
- 1/4 cup rice vinegar
- 4 teaspoons sesame seeds, toasted
- 2 teaspoons superfine sugar (I used just one packet of Splenda. Agave Necter would work too.)
Add and toss to coat:
- 1 large cucumber, scrubbed or peeled if waxed, halved crosswise, and cut into thin strips or thinly sliced crosswise. (The Hothouse/European cucumbers are perfect for this recipe, as the seeds are minimal and the peel isn’t bitter.)
Cover and refrigerate until the salad is cold, about 1 hour. I really can’t wait for it to refrigerate, I just start eating the entire bowl!
Gurkensalat (My Aunts very own recipe, who is married to a German, so it’s the real deal folks! I love it!)
Serves 6-8

- 1/4 cup white vinegar
- 1/3 cup vegetable oil
- 1/2 teaspoon dill weed
- pinch of salt
Add and toss to coat:
- 2 cucumbers, scrubbed or peeled if waxed, halved crosswise, and cut into thin strips or thinly sliced crosswise.

OK, here’s my FAVORITE recipe with cucumbers. It’s got dill in it like the one above…but it’s different so you still have to try it!
Pasta Dill Salad
1 C. Mayonnaise
2 T. Cider Vinegar
1-2 T. fresh dill or 1 tsp. dried dill weed
1 tsp. salt
1/8 tsp. pepper
1 C. chopped tomatoes
1/4 C. sliced green onions, chopped, seeded
1 C. cucumber, cut in 1/4 slices (I like to use more because I LOVE cucumbers)
8 oz. pasta shells, cooked, rinsed & drained (and cooled)
Mix all ingredients together. Toss, cover and chill for a few hours. (Can make night before)

Well, I’m glad someone knows how to use “the Joy of Cooking” cookbook. I have it, and it is so BIG and wordy, I just put it back on the shelf as soon as I pick it up!

I know, 1 C Mayonnaise is a lot!…I usually make the sauce and then actually double the noodles…stretch it go make it go a lot further. let me know if the 1/2 C. works great too…

I’ve been making a very similar salad to your Cool Cucumber salad since I was a kid, and recently, my 20-month old has started GOBBLING it up. Granted, she can finish a jar of bread and butter cucumber chips in two days, but she LOVES this salad! You can also add some THINLY sliced red onions. Delicious!
